We celebrate many holidays in our house! That’s why I was just checking when Hanukkah is this year. I found out it’s December 11 to December 19. (You can tell I’m behind with my holiday planning!)
I have tons of sweet potatoes from the CSA we belong to (where we get veggies straight from the farm). So, I’m going to try out a Sweet Potato Pancake Recipe tonight. It involves baking the pancakes, so it sounds healthier than the normal frying. I’ll let you know right here how they turn out.
Real Time Reporting: Now we’re cooking the pancakes. We had to add one extra egg to the recipe at the link above (we’re doubling the recipe). They also seemed to be burning on 400F – so I’m lowering the oven to 375F. We’ll see what happens!
Update: The 1st batch which was cooked in the oven was mediocre and it had too much cinnamon in it (as per the recipe at the link above). The 2nd batch I added only a couple of dashes of cinnamon to and I fried it in oil. They came out better. The next time I would find a different recipe for sweet potato latkes. Oh well, you win some, you lose some! The 2nd batch was pretty good just a bit too greasy.
