A Herman Cake is also called a Friendship Cake. It’s a sourdough coffee cake. But it’s also a kind of game. Here’s how it works…
It’s made with a starter dough that’s passed along from friend to friend like a chain letter. You’re given a piece of dough by a friend. You add ingredients to it and let it sit on your countertop for nine days. At the end of that time, you divide the dough into four pieces. Three of the the pieces you pass along to three other friends with instructions to to start their own cake chains. You keep one and let it stand overnight on the countertop… the next day you can add extra ingredients for flavoring and cook it.

A good piece of advice: never keep Herman in an airtight container. When it was going from one student’s mom to another and teachers too in our school, a friend of mine was given some dough in an airtight box before going home for lunch. She put the box on the countertop and as she got busy with her family’s lunch, she totally forgot to remove the cover. When she came back home in the evening, Herman had gotten free all by itself: the gas from the fermentation had caused it to explode and the poor boy was stuck in lumps on the kitchen ceiling and walls.
